Alright you guys, I have officially be living under a rock. Normally overnight oats/oatmeal are my go-to for a quick breakfast, but I’ve recently been introduced to the idea of using Quinoa instead of Oats ( I know, duh! Why didn’t I think of this before?)
Being that I can finally pronounce the word (KEY- NU-WAH) I figured what the heck, why not try to look up some recipes and see if it really is just as good as some old-fashioned oats.
To no surprise, it was!
Now Quinoa can be used in almost every recipe, but the one I really liked was a Quinoa Breakfast Bowl. It’s similar to oatmeal, but uses quinoa instead of oats.
After visiting The Kettle in Escondido (Think Friends tv show+ Hipster vibe), I couldn’t help but be intrigued over this item on their menu. Quinoa…oatmeal….breakfast for lunch… My taste buds were screaming!
I’ve always been a healthy eater and admit the I was late to the Quinoa bandwagon. After trying this item, I couldn’t help but grow a new obsession. Forget breaking out the bag of oats and consider adding some quinoa to your morning breakfast routine.
While I couldn’t necessarily get the workers to admit their recipe, they did give me some pointers on how to mimic the bowl. After much research (AKA: drooling over pictures on Instagram and “Pinning” my way to a happy stomach on Pinterest), I found a recipe that could compare.
If you’re looking for a quick recipe to jumpstart your day, I would suggest trying this bowl! It’s healthy, simple to make, satisfying and leaves you full until lunch time (only I can envision myself eating this during any time of the day).
Quinoa Breakfast Power Bowl
1 Cup of Quinoa Cooked- Can be boiled or use Microwaveable Quinoa
1 Cup of Almond Milk (Or any other preferred dairy)
1/2 tsp. of Ground Cinnamon
1/2 cup of sliced almonds (Once again any other preferred nuts)
Sliced Fruit of your choosing (My favorites: Bananas, Strawberries and Blueberries)
Directions:
In a small bowl, stir milk and ground cinnamon together.
Add cooked Quinoa (I used microwavable Quinoa and it works just fine) to a serving bowl.
Add milk mixture.
Top with sliced nuts and fruit.
Enjoy!
