Usually after working out, I always find myself thinking two things:
- Why do I have to be so hungry?
- WTF do I eat without eating my workout away?
Normally my go-to is always something having to do with fruit. Whether it’s a smoothie, peanut butter and banana, fruit with yogurt, etc.
Lately, I’ve surprised myself by actually becoming more of a veggie eater. I even yearned to eat a tomato like an apple the other day #whatisliferightnow
Now being that I’m back in school, I’ve managed to visit local coffee shops to “do my homework” in, but it simply just led to me eating and drinking tea without accomplishing much of anything #collegestudentproblems
Even though I wasn’t necessarily being “school productive,” I still managed to achieve something: eating a healthy meal filled with greens that provide great health benefits!
Today’s Meal: Quinoa Harvest Salad with a side of Wheat toast topped with avocado mash
Now being that I didn’t make this meal myself, I couldn’t help but find a salad recipe to try to mimic my own version. Thanks to chealseasmessyapron.com I now have a recipe for a delicious Apple Quinoa Salad! I can’t wait to try it! Recipe posted below!
INGREDIENTS
1/2 cup quinoa
1 cup chicken broth, vegetable broth, or water
1/3 cup sliced almonds
2 tablespoons sunflower seeds
3 cups (~2.5 ounces) fresh spinach
1/3 cup dried cranberries
1 Granny Smith (or favorite variety) apple
1 teaspoon lemon juice
Dressing
