Food for Thought: Loaded Sweet Potato

I may sound different, but I actually prefer sweet potatoes over regular ones. I’m not sure what it is, but I feel instant gratification to order anything sweet potato related when I see it on the menu. Today was no exception.

I’ve been obsessing and drooling over the healthy food pictures on  Sol Cal Cafe  ‘s instagram. It took me forever, but I finally found the time to make the trip to try this place for myself.

Boy oh boy, was it everything that I had hoped it would be.

The one menu item that made me as happy as a kid on Christmas, was the loaded baked Sweet Potato. What made this item so special, was the healthy toppings they placed on it.

Topped with Chili, Sautéed Kale, CornGarlic with Cilantro Cashew Cream Drizzle topping, this baked potato was a dream come true.

The nice surprise was that they sliced it into nice portions, allowing it to be simple to take to work, school, or not look like a hot mess while devouring it.

Safe to say, I’m ready to make this a part of my weekly food plans!

      It really was! I’m a big fan of Sweet Potato, so this definitely inspired me to think outside of the box and adding toppings when I bake my own at home 🙂 Thanks for reading and glad you liked the post!
